Union County Freeholder Mohamed S. Jalloh, liaison to RUNNELLS SpecializedHospital of Union County (center) presented a resolution honoring the registered dietitians of RUNNELLS Specialized Hospital to Rosemarie Fenchel, RD (registered dietitian), Chief Clinical Dietitian of Livingston (third from right). Joining in celebrating National Nutrition Month® in Union County were Barbara Baldasarre, MS, RN, of Scotch Plains, Runnells’ Administrative Director of Professional & Support Services (left); Jessica Aspras, RD of North Bergen (second from left); Joan Wheeler of Fanwood, MSN, RN, CNHA, Associate Administrator of RUNNELLS (third from left); Laura*, RD (second from right) and Suellen Moore, RD of Plainfield (right).

The dedicated registered dietitians of RUNNELLS SpecializedHospital of Union County were educating residents, patients, staff and visitors at the facility’s annual National Nutrition Month® Fair.

National Nutrition Month® is the American Dietetic Association’s annual nutrition education and information campaign, promoted by RUNNELLS Department of Food & Nutrition Services.

RUNNELLS registered dietitians stressed this year’s theme “Nutrition from the Ground Up” with an emphasis on awareness, treatment and prevention of diabetes. They also covered topics that included: starting with the basics, that eating right doesn’t have to be complicated; make calories count by thinking nutrient-rich, not good or bad food; eating a variety of foods from all food groups and balancing physical activity and a healthy diet as the best way to manage weight and promote overall health and fitness.

The fair included samples of healthy food alternatives and a chance to have your weight taken and per cent of body fat (BMI) calculated.

The type, quality and amount of food that individuals consume each day plays a vital role in their overall health and physical fitness. RUNNELLS Food & Nutrition Services staff works to deliver the healthiest, most well balanced nutrition to those in their care.

RUNNELLS employs registered dietitians who have a college degree and some have also completed graduate level courses. Additionally they have passed a national exam and received professional credentials, the RD (registered dietitian). Those who call themselves nutritionists often lack credentials from the American Dietetic Association.

Good nutrition is vital to all, especially the elderly. Proper nourishment can aid in the prevention of pressure ulcers. It also plays a significant role in inhibiting coronary heart disease, some types of cancer, as well as stroke, hypertension and osteoporosis. The on-going monitoring of patients and residents by staff dietitians ensures that patients and residents receive optimal nutrition and hydration. At RUNNELLS, specific diets are tailored to meet the needs of individual residents and patients daily.

“I have the highest regard for the professionalism of the registered dietitians of RUNNELLS Specialized Hospital,” said Union County Freeholder Mohamed S. Jalloh, the liaison to the facility. “I applaud the work that they do each day, playing a vital role in the quality of life of those in their care and taking on the job of nutrition education. As an individual for whom athletics has played a big part, I understand the role nutrition plays in wellness care. I therefore was proud to join with the other Union County Freeholders in designating March as “National Nutrition Month®” in Union County and to present a resolution to RUNNELLS registered dietitians acknowledging the importance of their work.”

Anyone concerned about special dietary needs being met if they or their loved ones are cared for at RUNNELLS whether in long term or sub-acute care may call the admissions office at (908) 771-5901.
